  • 1 cup long-grain rice rinsed
  • 2 cups vegetable or chicken broth homemade preferred
For the Zesty Flavor
  • 1 lemon (juiced and zested) fresh lemon is always best
  • 2 tablespoons olive oil
For Aroma and Seasoning
  • 2 cloves garlic (minced) opt for fresh for maximum intensity
  • 1 teaspoon dried oregano fresh is great for a bolder flavor
  • to taste teaspoon salt adjust based on broth saltiness
  • to taste teaspoon black pepper freshly ground
For Garnishing
  • 1/4 cup fresh parsley (chopped) can substitute with dill

Method
 

Steps
  1. Rinse the rice in a fine mesh strainer under cold water until the water runs clear.
  2. Heat the broth in a medium-sized saucepan over medium heat until it simmers.
  3. In a large pot, heat olive oil over medium heat and sauté minced garlic until fragrant.
  4. Add the rinsed rice to the pot and sauté for 2-3 minutes.
  5. Carefully add the simmering broth, lemon juice, lemon zest, oregano, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
  7. After simmering, let it sit covered for an additional 5 minutes, then fluff with a fork.
  8. Garnish with chopped parsley before serving.
