For the Tea Base
  • 4 cups purified water
  • 4 sachets raspberry leaf tea or black/green tea as a substitute
For the Peach Syrup
  • 1.5 cups purified water
  • 3 medium fresh peaches sliced; frozen can be used in a pinch
  • 0.5 cups honey can substitute with stevia or maple syrup
  • 1 tablespoon lemon zest important for brightness
  • 1 teaspoon vanilla extract optional

Method
 

Step-by-Step Instructions
  1. Bring 4 cups of purified water to a rolling boil in a medium saucepan. Remove from heat and steep 4 raspberry leaf tea sachets for 5 to 10 minutes.
  2. Allow the tea to cool to room temperature, setting aside for later use.
  3. In another saucepan, combine 1 ½ cups of purified water, sliced fresh peaches, honey, lemon zest, and vanilla extract. Bring to a boil over medium heat.
  4. Reduce the heat and let it simmer for 15 minutes, stirring occasionally. Strain the syrup to remove solids and let cool.
  5. In a large pitcher, combine the cooled peach syrup and the brewed raspberry tea. Stir well.
  6. Taste and add more honey if a sweeter tea is desired.
  7. To serve, fill glasses with ice cubes and pour the peach tea over the ice. Garnish with a fresh peach slice or lemon wedge.
