  1. Begin by crushing the Löffelbiskuits (Ladyfingers) into fine crumbs using a food processor or zip-top bag and rolling pin.
  2. Transfer the crumbs into a springform pan and press them down to form an even base.
  3. In a mixing bowl, combine the quark and freshly chopped woodruff, blending until smooth and creamy.
  4. Add the lemon juice to the mixture and stir gently to integrate the flavors.
  5. Dissolve the gelatine in warm water and add it to the cream mixture while mixing continuously.
