- Preheat your oven to 375°F (190°C).
- Slice the jalapenos in half and remove seeds and membranes.
- Stuff each jalapeno half with cream cheese and place on a baking sheet.
- Bake for 25–30 minutes until soft and bubbly.
- Prepare the bread with cheddar on one slice and Monterey Jack on the other.
- Crisp up the bacon in a skillet and layer on top of the Monterey Jack.
- Sandwich the cheese and jalapeno halves securely, and spread butter on one side.
- Grill the sandwiches in a skillet, 3–4 minutes on each side until golden brown.
- Slice and serve with tomato soup if desired.
