- Cook jasmine rice according to package instructions, ideally a few hours in advance.
- In a large skillet, heat vegetable oil over medium-high heat. Add diced chicken and cook for 5-7 minutes until golden brown.
- Add another tablespoon of oil, then toss in minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
- Add frozen peas and carrots to the skillet, stirring for about 2-3 minutes until heated through.
- Return the cooked chicken to the skillet, then add the cooled jasmine rice. Toss everything gently to combine.
- Pour in soy sauce and a splash of sesame oil, switch to high heat, and stir continuously for 3-4 minutes.
- Remove from heat and fold in chopped green onions. Serve hot.
