  • 1 cup Jasmine Rice leftover rice is ideal
  • 1 pound Chicken Breast can substitute with shrimp or tofu
For the Stir-Fry
  • 2 tablespoons Vegetable Oil can be replaced with sesame oil
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 cup Frozen Peas and Carrots or any favorite veggies
For the Sauce
  • 3 tablespoons Soy Sauce gluten-free option available
  • 1 teaspoon Sesame Oil to taste
  • 2 stalks Green Onions finely chopped

Method
 

Step-by-Step Instructions
  1. Cook jasmine rice according to package instructions, ideally a few hours in advance.
  2. In a large skillet, heat vegetable oil over medium-high heat. Add diced chicken and cook for 5-7 minutes until golden brown.
  3. Add another tablespoon of oil, then toss in minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  4. Add frozen peas and carrots to the skillet, stirring for about 2-3 minutes until heated through.
  5. Return the cooked chicken to the skillet, then add the cooled jasmine rice. Toss everything gently to combine.
  6. Pour in soy sauce and a splash of sesame oil, switch to high heat, and stir continuously for 3-4 minutes.
  7. Remove from heat and fold in chopped green onions. Serve hot.
