Step-by-Step Instructions

  3. Set up three shallow bowls with all-purpose flour, a beaten egg, and a mixture of panko breadcrumbs, dried parsley, and grated Parmesan cheese.
  4. Heat about ¼ inch of vegetable oil in a skillet over medium-low heat until shimmering.
  5. Dredge each zucchini slice in flour, dip into beaten egg, and then coat with the panko mixture.
