- Preheat your oven to 375°F (190°C) and prepare a loaf pan by lightly greasing it.
- Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Remove and drain on paper towels. Sauté mushrooms in the bacon fat for 5-7 minutes until browned.
- In a large bowl, combine ground beef, eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently until combined.
- Shape the meat mixture into a loaf in the prepared pan. Press Swiss cheese cubes into the center and top with sautéed mushrooms and crumbled bacon.
- Bake in the preheated oven for 45-55 minutes or until internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for about 10 minutes, then slice and serve, optionally garnished with fresh parsley.
