  • 1 cup warm milk or dairy-free milk for lactose-free
  • 2.25 teaspoons instant yeast ensure freshness
  • 2 tablespoons honey or maple syrup/agave for vegan
  • 2 large eggs or flax eggs for vegan
  • 4 cups all-purpose flour can use bread flour
  • 1 teaspoon salted butter or olive oil for dairy-free
For the Filling
  • 4 cloves garlic minced, can use roasted garlic
  • 0.5 cup Parmesan cheese or cheddar/pecorino
  • 1/4 cup fresh herbs basil, thyme, sage; can use dried

Method
 

Dough Preparation
  1. In a mixing bowl, combine warm milk, instant yeast, and honey. Let it froth for about 5-10 minutes until bubbly.
  2. Add eggs, all-purpose flour, and salt. Mix on low for 4-5 minutes until combined, then knead in softened butter for 2-3 minutes until smooth.
First Rise
  1. Transfer dough to a lightly oiled bowl, cover with a towel, and place in a warm area for about 1 hour until doubled in size.
Filling Preparation
  1. In a separate bowl, whisk softened butter, minced garlic, grated Parmesan, and fresh herbs until creamy.
Shape Dough
  1. Once risen, punch down dough, roll into a 12x18 inch rectangle, spread filling, roll tightly into a log, slice, and twist together.
Second Rise
  1. Place the twisted dough on a lined baking sheet, cover with a towel, and let rise for 45 minutes until puffy.
Bake
  1. Preheat oven to 350°F (175°C). Bake twisted dough for 30-35 minutes until golden brown.
