For the Whipped Feta
  • 8 oz Feta Cheese Can substitute with goat cheese or ricotta
  • 1/4 cup Heavy Cream Or substitute with plant-based milk
  • 2 tbsp Lemon Juice Lime juice as alternative
  • 1 clove Garlic Optional, omit for simpler flavor
For Garnish
  • to taste Fresh Cilantro or Parsley Mint can be used as an alternative

Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash, peel, and slice the fresh carrots into 1/2-inch thick rounds.
  3. In a mixing bowl, combine olive oil, harissa paste, honey, ground cumin, smoked paprika, salt, and black pepper.
  4. Toss the sliced carrots in the honey harissa mixture until well-coated.
  5. Spread the coated carrots evenly onto the prepared baking sheet in a single layer.
  6. Roast the carrots in the preheated oven for 25-30 minutes, flipping halfway through.
  7. While the carrots roast, prepare the whipped feta by blending feta cheese, heavy cream, olive oil, and lemon juice until smooth.
  8. Chill the whipped feta for at least 30 minutes before serving.
  9. To serve, spread the chilled whipped feta on a platter and arrange the roasted honey harissa carrots on top.
  10. Garnish with freshly chopped herbs and a drizzle of honey or olive oil.
