- In a medium saucepan, combine the pitted fresh sweet cherries with water. Bring to a boil, then reduce heat and mash cherries.
- Cover the pan slightly ajar and let it simmer for 15 minutes until the cherries are soft and fragrant.
- Remove from heat and let cool slightly. Pour into a blender, adding raw honey, lime zest, and lime juice. Blend until smooth.
- Strain mixture if desired, then transfer to a container and refrigerate for at least 30 minutes.
- To serve, fill an 8oz glass with ice, pour in 2oz of cherry syrup, and top with club soda.
- For a pitcher, combine all cherry syrup with 30oz club soda in a pitcher filled with ice.
- Store leftover syrup in an airtight container for up to one week or freeze for longer storage.
