Ingredients
  

For the Cherry Base
  • 4 cups Pitted Fresh Sweet Cherries Swap for tart cherries if desired.
  • 1 cup Water
For the Sweetening and Flavoring
  • 1/2 cup Raw Honey Maple syrup or agave can be used as substitutes.
  • 1 tablespoon Lime Zest Fresh is always best!
  • 1/4 cup Lime Juice About the juice from two limes.
For the Fizz
  • 30 ounces Club Soda Sparkling water can be used as an alternative.
For the Finishing Touches
  • 4 pieces Fresh Cherries For garnish.
  • 2 pieces Lime For garnish.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine the pitted fresh sweet cherries with water. Bring to a boil, then reduce heat and mash cherries.
  2. Cover the pan slightly ajar and let it simmer for 15 minutes until the cherries are soft and fragrant.
  3. Remove from heat and let cool slightly. Pour into a blender, adding raw honey, lime zest, and lime juice. Blend until smooth.
  4. Strain mixture if desired, then transfer to a container and refrigerate for at least 30 minutes.
  5. To serve, fill an 8oz glass with ice, pour in 2oz of cherry syrup, and top with club soda.
  6. For a pitcher, combine all cherry syrup with 30oz club soda in a pitcher filled with ice.
  7. Store leftover syrup in an airtight container for up to one week or freeze for longer storage.

Notes
