- Cut boneless, skinless chicken into bite-sized pieces and toss with cornstarch, salt, and pepper. Let rest for 10 minutes.
- In a skillet, heat oil over medium-high heat. Sear the chicken for about 5–7 minutes until cooked through. Remove the chicken and set aside.
- In the same skillet, heat sesame oil and sauté minced garlic for around 30 seconds until fragrant.
- Add soy sauce, hoisin sauce, honey, and optional chili flakes or Sriracha. Simmer for 2-3 minutes until slightly thickened.
- Cook ramen or lo mein noodles according to package instructions, usually 3-4 minutes. Drain and rinse under cold water.
- Combine chicken with the sauce in the skillet, add the noodles, and toss everything to coat. Cook for another 2 minutes.
- Serve hot, garnished with green onions and sesame seeds.
