  • 1 lb Flank Steak Skirt steak or sirloin are good substitutes.
  • 2 cups Corn Fresh corn preferred; frozen works too.
  • 1 cup Quinoa Brown rice or cauliflower rice are alternatives.
  • 1 large Avocado Choose a ripe one for maximum creaminess.
For the Cilantro Cream Sauce
  • 1/2 cup Sour Cream Greek yogurt or coconut yogurt can be used for a dairy-free version.
  • 1/4 cup Cilantro Chopped; basil or parsley can be alternatives.
  • 2 cloves Garlic Minced; use freshly minced for best flavor.
  • 2 tbsp Lime Juice Adjust according to taste.

Method
 

Preparation Instructions
  1. Remove the flank steak from the fridge and let it rest at room temperature for about 30 minutes.
  2. Season the steak generously with salt and pepper on both sides.
  3. Heat a skillet over medium-high heat for 3-4 minutes.
  4. Sear the seasoned steak in the skillet for 4-5 minutes on each side until browned and medium-rare.
  5. Remove the steak and let it rest for 5 minutes before slicing thinly against the grain.
  6. In the same skillet, reduce heat to medium, add olive oil, and sauté 2 cups of corn for 5-7 minutes.
  7. Combine sour cream, cilantro, minced garlic, and lime juice in a mixing bowl; stir until smooth.
  8. To assemble, add quinoa to bowls, layer sliced steak, sautéed corn, and avocado, and drizzle with cilantro cream.
