For the Chicken
  • 1.5 pounds Chicken Thighs or chicken breasts for a leaner option
  • 1/4 cup Soy Sauce low-sodium preferred
  • 2 tablespoons Honey maple syrup as a vegan substitute
  • 2 tablespoons Rice Vinegar apple cider vinegar is an alternative
  • 1-2 tablespoons Sriracha adjust to spice level
  • 2 tablespoons Cornstarch arrowroot powder can be used
  • 2 teaspoons Sesame Oil toasted sesame oil can be used
For the Vegetables
  • 1 medium Red Bell Pepper or other colorful peppers
  • 1 medium Yellow Bell Pepper or red/green peppers
  • 1 medium Onion substitute with yellow or white onions
  • 3 cloves Garlic fresh preferred, garlic powder can suffice
  • 1 tablespoon Ginger or ground ginger as substitute
For the Garnish
  • 2 tablespoons Green Onions use any fresh herb as substitute
  • 1 tablespoon Sesame Seeds omit if desired
For Serving
  • 2 cups Cooked Rice quinoa or noodles as alternatives

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the chicken thighs, soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Stir the mixture until well-coated and refrigerate for 30 minutes to 2 hours.
  2. Mix the remaining soy sauce, honey, rice vinegar, sriracha, and about ¼ cup of water in a separate bowl. Set aside.
  3. Heat a skillet over medium-high heat and coat with olive oil. Add the marinated chicken and cook for 5 to 7 minutes until golden brown and cooked through.
  4. In the same skillet, add more olive oil if needed, followed by onions, bell peppers, garlic, and ginger. Sauté for about 5 to 7 minutes until tender-crisp.
  5. Return the cooked chicken to the skillet and pour the prepared sauce over. Simmer for about 3 to 5 minutes until the sauce thickens.
  6. Serve over cooked rice and garnish with chopped green onions and sesame seeds.
