  • 1 lb boneless, skinless chicken breast
For the Stir-Fry
  • 2 tbsp olive oil can substitute with canola or vegetable oil
  • 1 cup bell peppers (mixed colors) adds sweetness and crunch
  • 2-3 cloves minced garlic fresh garlic is best
  • 2 tbsp soy sauce tamari for gluten-free version
  • 1 tbsp hoisin sauce mix sugar and soy sauce if hoisin is unavailable
  • 1-2 tsp sriracha adjust for desired spice level
  • 2 pieces fresh jalapeños adjust quantity to taste
  • 1/4 cup green onions for garnish
  • 1/4 cup cilantro for garnish

Method
 

Cooking Steps
  1. Heat the oil in a large skillet or wok over medium-high heat until shimmering, about 2 minutes.
  2. Add the bite-sized pieces of chicken, season with salt and pepper, and sauté for about 5-7 minutes until cooked through.
  3. Toss in the sliced bell peppers and minced garlic, stir-frying for 3-4 minutes.
  4. Pour in soy sauce, hoisin sauce, and sriracha, tossing everything together for about 2 minutes.
  5. Remove from heat and top with sliced jalapeños, green onions, and cilantro.
  6. Serve hot over rice or noodles.
