Preparation Steps
  1. Carefully hard-boil 6 large eggs. Cover with cold water, bring to boil, cover, and let sit for 12 minutes. Cool in an ice bath for 5 minutes before peeling.
  2. Peel each egg under running water, cut in half and scoop the yolks into a mixing bowl. Arrange egg whites on a serving plate.
  3. Add Greek yogurt, blue cheese, hot sauce, and dry mustard to the yolks. Mash until smooth and season with salt, pepper, and more hot sauce if desired.
  4. Fill each egg white with the yolk mixture, overfilling slightly for a nice presentation.
  5. Garnish with crumbled blue cheese, drizzle with hot sauce and sprinkle with herbs. Chill for at least 15 minutes before serving.
