Preparation Steps
- Carefully hard-boil 6 large eggs. Cover with cold water, bring to boil, cover, and let sit for 12 minutes. Cool in an ice bath for 5 minutes before peeling.
- Peel each egg under running water, cut in half and scoop the yolks into a mixing bowl. Arrange egg whites on a serving plate.
- Add Greek yogurt, blue cheese, hot sauce, and dry mustard to the yolks. Mash until smooth and season with salt, pepper, and more hot sauce if desired.
- Fill each egg white with the yolk mixture, overfilling slightly for a nice presentation.
- Garnish with crumbled blue cheese, drizzle with hot sauce and sprinkle with herbs. Chill for at least 15 minutes before serving.
