Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Scrub the potatoes, poke holes, and bake for 40-50 minutes until fork-tender.
  2. Cut a slit lengthwise in each potato and scoop out the insides into a mixing bowl.
  3. Mix the scooped potato with cream cheese, minced garlic, salt, and pepper until smooth.
  4. Sauté shrimp and crawfish in melted butter with Cajun seasoning for 4-5 minutes until cooked.
  5. Make the cheese sauce by whisking flour into melted butter, then adding reserved seafood liquid and half and half until thick.
  6. Fill each potato skin with the creamy potato mixture, top with seafood, and pour cheese sauce over the top.
  7. Broil the potatoes for 2-3 minutes until the cheese is bubbly and golden.
  8. Garnish with chives or green onions and serve warm.
