Cooking Steps

  2. Slice each zucchini in half lengthwise and scoop out the center, leaving about a quarter-inch of flesh.
  3. Cook your ground meat in a skillet over medium heat until browned (5-7 minutes). Drain excess fat.
  4. Stir in tomato sauce and Italian seasoning. Heat through for 2-3 minutes.
  5. Stuff each zucchini boat with the meat mixture, packing it down gently.
  6. Top with shredded cheese and optionally sprinkle with basil or red pepper flakes.
  7. Bake stuffed zucchinis for 25-30 minutes until tender and cheese is bubbly.
  8. Let cool for 5 minutes before serving warm, optionally with a side salad or bread.
