  1. Begin by placing the boneless chicken breasts or thighs at the bottom of your slow cooker, ensuring they're evenly spaced. Trim away any sinew or fat.
  2. Gently layer 2 cups of corn over the chicken, then sprinkle the cubed cream cheese on top without mixing.
  3. Add the cotija cheese, fresh lime juice, minced garlic, chili powder, smoked paprika, and onion powder on top of the corn and cream cheese.
  4. Cover the slow cooker with its lid and set it to cook on LOW for 4-5 hours or HIGH for 2-3 hours.
