- Begin by placing the boneless chicken breasts or thighs at the bottom of your slow cooker, ensuring they're evenly spaced. Trim away any sinew or fat.
- Gently layer 2 cups of corn over the chicken, then sprinkle the cubed cream cheese on top without mixing.
- Add the cotija cheese, fresh lime juice, minced garlic, chili powder, smoked paprika, and onion powder on top of the corn and cream cheese.
- Cover the slow cooker with its lid and set it to cook on LOW for 4-5 hours or HIGH for 2-3 hours.
- Once cooking is done, carefully remove the lid and use two forks to shred the chicken right in the pot.
