Flatbread Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: Combine almond flour, ground flaxseed, baking powder, and sea salt in a mixing bowl.
- Combine wet ingredients: In another bowl, whisk olive oil, eggs, and water until blended.
- Form the dough: Gradually combine wet and dry mixtures to form a cohesive dough.
- Shape the flatbread: Transfer dough onto the baking sheet and press into a disc about 1/4 inch thick.
- Bake for 15-20 minutes or until edges are golden and center is firm.
- Prepare the tapenade: Combine sardines, olives, capers, parsley, lemon juice, and garlic in a food processor and pulse to desired consistency.
- Assemble and serve: Spread tapenade over slightly cooled flatbread and slice into portions.
