Preparation Steps
  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, mix together tomato paste, cooking oil, honey, and paprika to create a rub. Coat the turkey legs with this mixture.
  3. Place the seasoned turkey legs into a baking dish and add the broth. Cover tightly with aluminum foil and bake for approximately 90 minutes.
  4. In a blender, purée corn, cream cheese, salt, and pepper until smooth to create the corn spread.
  5. Remove the turkey from the oven and let it cool for about 10 minutes, then shred the turkey into bite-sized pieces.
  6. Assemble the burgers by spreading the corn mixture on the bottom half of each brioche bun, topping it with the shredded turkey, cranberries, and scallions.
  7. Serve on a platter alongside sweet potato fries or a salad.
