Method
 

Preparation Steps
  1. Create a marinade by blending garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper. Pour over chicken thighs in a bag and refrigerate for at least 8 hours, preferably overnight.
  2. Prepare the green sauce by blending jalapeños, cilantro, green onions, garlic, mayonnaise, Greek yogurt, lime juice, salt, and black pepper. Gradually add olive oil while blending until smooth. Refrigerate.
  3. Preheat grill to medium-high heat. Remove marinated chicken from the bag and grill for 5-6 minutes per side until cooked through.
  4. For roasting, preheat oven to 500°F, place marinated chicken in roasting pan, roast uncovered for 30 minutes, then cover with foil for 15 minutes.
  5. For air frying, preheat air fryer to 360°F, arrange chicken in basket, and cook for 12-15 minutes flipping halfway through.
  6. Slice the cooked chicken and serve with the green sauce on the side for customization.
