  • 2 medium Green Bell Peppers can switch to red or yellow
  • 1 medium Onion use yellow or white onion, or shallots for depth
For the Sauce
  • 1 can Stewed Tomatoes fresh tomatoes can be used, reduce liquid for consistency
  • 1/4 cup Soy Sauce use gluten-free version if needed
  • 2 cloves Garlic minced; fresh garlic is best

Cooking Instructions
  1. Prep your ingredients by chopping the beef sirloin into uniform pieces and slicing the bell peppers into strips. Dice the onion finely.
  2. Combine beef sirloin, bell peppers, onion, stewed tomatoes, minced garlic, and soy sauce in the crock pot. Stir gently to combine.
  3. Cook on low for 6-8 hours or high for 4 hours until the beef is tender.
  4. Check tenderness of the beef about 30 minutes before the cooking time ends.
  5. Serve over rice or mashed potatoes, garnished with parsley or scallions.
