- Preheat your oven to 350°F (175°C).
- Melt 2 tablespoons of unsalted butter in an oven-safe skillet over medium heat. Add the sliced onions with a sprinkle of salt and sauté for 15 minutes.
- Stir in 1 tablespoon of brown sugar and 3 minced garlic cloves. Cook for an additional 5 minutes until caramelized.
- Push onions aside and add bratwursts to the skillet, searing for about 5 minutes until golden brown.
- Pour in 1 bottle (12 oz) of beer and add fresh thyme. Deglaze the skillet by scraping the bottom.
- Cover with a lid and braise in the oven for 30-40 minutes until the bratwurst are tender.
- Let the skillet rest for a few minutes before serving with caramelized onions on top and mustard on the side.
