Method

Step-by-Step Instructions for Lemon Paprika Roast Chicken Thighs
  1. In a large mixing bowl, whisk together fresh lemon juice, olive oil, smoked paprika, minced garlic, salt, and pepper until well combined. Add the chicken thighs, ensuring they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, up to 4 hours.
  2. Once marinated, preheat your oven to 425°F (220°C). Prepare your baking sheet by lining it with parchment paper or aluminum foil.
  3. Remove the chicken from the marinade, allowing excess to drip off. Place the chicken thighs skin-side up on the lined sheet, ensuring space between each for even cooking.
  4. Roast the chicken for 35 to 40 minutes, basting halfway through. The chicken is ready when golden brown and an internal temperature of 165°F (74°C) is reached.
  5. Let the chicken rest for about 5 minutes. Garnish with fresh herbs and lemon wedges before serving.
