For the Meatloaf
  • 1 pound Ground Beef Rich flavor
  • 1 pound Ground Pork Adds moisture
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 2 large Eggs Beaten
  • 1 cup Whole Milk Or almond milk
  • 1 cup Seasoned Breadcrumbs Substitute with oats for gluten-free
  • 1/2 cup Parmesan Cheese Or nutritional yeast for vegan
  • 1/4 cup Fresh Parsley Chopped
  • 2 tablespoons Worcestershire Sauce
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
For the Glaze
  • 1 cup BBQ Sauce Or sugar-free BBQ sauce
  • 1/4 cup Honey Or maple syrup for vegan
  • 1/4 cup Grape Jelly Any fruit jelly can be used
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. Sauté the diced onion and minced garlic in olive oil until soft, about 5 minutes.
  3. In a large mixing bowl, combine beaten eggs, whole milk, seasoned breadcrumbs, Parmesan cheese, and seasonings. Let sit for 5 minutes.
  4. Fold in the cooled onion and garlic mixture with the ground meats until just combined.
  5. Transfer the meat mixture to the prepared loaf pan, pressing down gently.
  6. In a separate bowl, whisk together BBQ sauce, honey, grape jelly, apple cider vinegar, and Dijon mustard.
  7. Spread one-third of the prepared glaze over the top of the meatloaf.
  8. Bake for 45 minutes, then brush another layer of glaze and bake for an additional 25-30 minutes until the internal temperature reaches 160°F.
  9. Let the meatloaf rest for about 10 minutes before serving with reserved glaze.
