- In a large skillet, heat 2 tablespoons of olive oil over medium heat for about 1-2 minutes.
- Add one chopped onion and three minced garlic cloves. Sauté for 2-3 minutes until the onion is translucent.
- Add 4 cups of diced potatoes and one chopped bell pepper. Stir and cook for about 10 minutes, stirring occasionally.
- Push the vegetables to the side of the skillet and add 1 pound of ground turkey. Cook for 5-7 minutes until browned.
- Stir in smoked paprika, dried thyme, salt, pepper, and red chili flakes. Cook for an additional 5-7 minutes until potatoes are tender.
- Remove from heat and sprinkle with chopped fresh parsley before serving warm.
