- Start by arranging the chicken thighs in the bottom of your slow cooker, ensuring they are evenly spaced. Next, thinly slice your sweet onion and layer the slices on top of the chicken.
- In a separate bowl, combine the chicken broth, freshly squeezed lemon juice, extra virgin olive oil, minced garlic, dried oregano, dried thyme, sea salt, and freshly ground black pepper. Whisk these ingredients together until well blended. Pour it evenly over the layered chicken and onions in the slow cooker.
