- Preheat your oven to 400°F (200°C).
- In a medium-sized bowl, whisk together low-sodium soy sauce, grated fresh ginger, honey, and lemon juice until fully combined.
- Place the cod fillets into a shallow dish or resealable bag and pour half of the marinade over the top. Allow to marinate for 15–30 minutes.
- Once marinated, remove the cod fillets and lay them on a greased baking sheet. Drizzle the remaining marinade over the top.
- Bake for 12–15 minutes until flaky and tender, and the glaze is caramelized.
- (Optional) Toast sesame seeds in a skillet over medium heat for 2–3 minutes until golden brown.
- Remove from oven, drizzle with leftover marinade, garnish with green onions and toasted sesame seeds, and serve with steamed rice or quinoa.
