Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, whisk together low-sodium soy sauce, grated fresh ginger, honey, and lemon juice until fully combined.
  3. Place the cod fillets into a shallow dish or resealable bag and pour half of the marinade over the top. Allow to marinate for 15–30 minutes.
  4. Once marinated, remove the cod fillets and lay them on a greased baking sheet. Drizzle the remaining marinade over the top.
  5. Bake for 12–15 minutes until flaky and tender, and the glaze is caramelized.
  6. (Optional) Toast sesame seeds in a skillet over medium heat for 2–3 minutes until golden brown.
  7. Remove from oven, drizzle with leftover marinade, garnish with green onions and toasted sesame seeds, and serve with steamed rice or quinoa.
