- Cook jasmine rice by bringing a pot of water to a boil. Add 1 cup of jasmine rice to 1.5 cups of water, reduce heat and simmer for about 15 minutes.
- In a large skillet, heat 2 tablespoons of oil over medium heat. Add chopped onion and cook for about 5 minutes until translucent.
- Incorporate minced garlic and grated ginger into the skillet, sauté for approximately 1 minute until fragrant.
- Sprinkle in curry powder and toast for about 30 seconds while stirring.
- Pour in coconut milk, lime juice, and lime zest, and stir. Simmer gently for about 3-4 minutes until sauce thickens.
- Gently add the white fish fillets and let them simmer for 10-12 minutes until they flake easily.
- Taste the coconut sauce and season with salt and pepper as desired.
- Serve jasmine rice on each plate topped with the Coconut Lime Fish Curry and garnish with fresh cilantro.
