Ingredients
  

For the Fish
  • 4 fillets White Fish (cod or tilapia) fresh or frozen
  • 1 can Coconut Milk light coconut milk for lighter meal
  • 2 tablespoons Lime Juice fresh lime juice preferred
  • 1 teaspoon Lime Zest a small amount to avoid bitterness
For the Rice
  • 1 cup Jasmine Rice or basmati rice as substitute
For the Aromatics
  • 1 medium Onion chopped; yellow or white
  • 2 cloves Garlic minced; garlic powder can be used
  • 1 tablespoon Ginger freshly grated
For Seasoning
  • 1 tablespoon Curry Powder adjust based on spice preference
  • to taste Salt
  • to taste Pepper
For Garnish
  • 1 bunch Fresh Cilantro or parsley as substitute

Method
 

Cooking Instructions
  1. Cook jasmine rice by bringing a pot of water to a boil. Add 1 cup of jasmine rice to 1.5 cups of water, reduce heat and simmer for about 15 minutes.
  2. In a large skillet, heat 2 tablespoons of oil over medium heat. Add chopped onion and cook for about 5 minutes until translucent.
  3. Incorporate minced garlic and grated ginger into the skillet, sauté for approximately 1 minute until fragrant.
  4. Sprinkle in curry powder and toast for about 30 seconds while stirring.
  5. Pour in coconut milk, lime juice, and lime zest, and stir. Simmer gently for about 3-4 minutes until sauce thickens.
  6. Gently add the white fish fillets and let them simmer for 10-12 minutes until they flake easily.
  7. Taste the coconut sauce and season with salt and pepper as desired.
  8. Serve jasmine rice on each plate topped with the Coconut Lime Fish Curry and garnish with fresh cilantro.
