Method
 

Preparation Steps
  1. In a medium bowl, whisk together egg yolk, Dijon mustard, lime juice, and honey until smooth. Gradually add oil while whisking until emulsified. Stir in smoked paprika and chopped chipotle peppers.
  2. Season chicken breasts with salt and pepper. Preheat grill or skillet, add olive oil, and grill chicken for 4-5 minutes per side until cooked through.
  3. Butter one side of each slice of bread. Spread smoky chipotle mayo on the unbuttered side, layer grilled chicken, bacon, tomato, and cheddar cheese.
  4. Heat panini press or skillet over medium heat. Cook the sandwich for 3-6 minutes until golden brown and cheese is melted.
  5. Remove from heat, let cool for a minute, and slice in half before serving.
