Preparation Steps
- In a medium bowl, whisk together egg yolk, Dijon mustard, lime juice, and honey until smooth. Gradually add oil while whisking until emulsified. Stir in smoked paprika and chopped chipotle peppers.
- Season chicken breasts with salt and pepper. Preheat grill or skillet, add olive oil, and grill chicken for 4-5 minutes per side until cooked through.
- Butter one side of each slice of bread. Spread smoky chipotle mayo on the unbuttered side, layer grilled chicken, bacon, tomato, and cheddar cheese.
- Heat panini press or skillet over medium heat. Cook the sandwich for 3-6 minutes until golden brown and cheese is melted.
- Remove from heat, let cool for a minute, and slice in half before serving.
