For Sauce
  • 1 cup Marinara Sauce Rao’s brand is suggested for lower sugar content.
For Garnish
  • 1 tablespoon Fresh Basil Use fresh ribbons for best effect.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and coat the bottom of a casserole dish with melted unsalted butter.
  2. Pound the chicken breasts to about ½ inch thickness if they are not thin-cut.
  3. Distribute half of the shredded smoked mozzarella and crumbled bacon evenly among the pounded chicken breasts and roll tightly.
  4. Season the rolled chicken generously with salt and freshly ground black pepper.
  5. Bake the Chicken Roll Ups for 20-25 minutes until golden brown and no longer pink in the center.
  6. Pour marinara sauce evenly over the chicken roll ups and top with the remaining smoked mozzarella.
  7. Return to the oven for another 3-5 minutes until the cheese is bubbly and melted.
  8. Garnish with fresh basil ribbons and serve with a side of spaghetti squash or pasta.
