Step-by-Step Instructions for Chicken Marsala
  1. Slice chicken breasts in half lengthwise and pound to ½ inch thickness, seasoning with salt and black pepper. Dredge in flour.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the floured chicken cutlets for 3-4 minutes per side until cooked through. Transfer to a plate.
  3. In the same skillet, add more olive oil if needed, and sauté sliced mushrooms for about 5 minutes until browned. Add garlic and onion powder, cooking for another minute.
  4. Pour in Marsala wine, scraping brown bits from the skillet. Simmer for 4-5 minutes. Stir in chicken stock and cream, and simmer for another 4-5 minutes until sauce thickens.
  5. Return chicken to the skillet, spoon sauce over it, and heat through for 2-3 minutes to absorb flavors.
