Step-by-Step Instructions
  1. Pat the salmon fillets dry with paper towels and season with salt, pepper, curry powder, garlic powder, and smoked paprika. Allow to sit for about 10 minutes.
  2. In a large skillet, heat olive oil over medium-high heat until shimmering, about 2-3 minutes.
  3. Sear the salmon fillets, skin side down if applicable, for 4-5 minutes. Flip and cook for an additional 4-5 minutes until cooked through.
  4. Add diced onions and bell peppers to the skillet, sauté for 3-4 minutes until onions are translucent.
  5. Pour in coconut milk and bring to a gentle simmer for 2-3 minutes.
  6. Return the salmon to the skillet and spoon the sauce over it, simmer for 1-2 minutes.
