Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Slice the focaccia bread and place it on a baking sheet. Toast the bread in the oven for about 8-10 minutes until lightly golden and crispy.
  2. In a small bowl, mix together mayonnaise, sour cream, minced chipotle peppers, and lemon juice until smooth to prepare your chipotle mayo.
  3. Spread a layer of chipotle mayo on one half of the toasted focaccia. Layer shredded roast chicken over the mayo, then add gouda cheese and peppadew peppers.
  4. On the other half, spread smashed avocado and season with black pepper and salt.
  5. Add jalapeno slices if desired, drizzle more chipotle mayo, and then place the two halves together.
  6. Grill the sandwich in a skillet over medium heat for about 3-4 minutes on each side until the cheese melts and the bread is golden brown.
