  • 2 cups Zucchini You can substitute with yellow squash.
  • 1 cup All-purpose flour
  • 1/2 cup Cornmeal
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
For Binding and Richness
  • 3 large Eggs
  • 1 cup Whole milk
  • 1/4 cup Olive oil
For Topping and Flavor
  • 1 cup Parmesan cheese Grated.
  • 1 tbsp Fresh thyme Dried thyme works too (1 tsp dried for 1 tbsp fresh).
  • 1/4 cup Pine nuts Optional.
  • 2 cloves Garlic Minced.
  • 2 tbsp Olive oil for drizzling

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking pan or line with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Whisk thoroughly.
  3. In a separate bowl, beat the eggs, then add whole milk and olive oil, whisking until smooth.
  4. Gently pour the wet mixture into the dry ingredients, using a spatula to combine without overmixing.
  5. Fold in the sliced zucchini, minced garlic, grated Parmesan, fresh thyme, and pine nuts if using.
  6. Pour the batter into the prepared baking pan and drizzle a little olive oil on top.
  7. Bake in the preheated oven for 35-40 minutes until golden and firm on top.
  8. Remove from the oven and let cool for about 10 minutes before slicing and serving warm.
