Preparation
- Soak wooden skewers in water for 10–20 minutes to prevent burning.
- In a medium bowl, mix soy sauce, water, red wine or mirin, brown sugar, and vinegar. Stir until sugar dissolves.
- In a large mixing bowl, combine minced garlic, ginger, ground pepper, and 1/4 cup of sauce. Add chicken and marinate for at least 10 minutes.
- Pour remaining sauce into a saucepan, bring to a gentle boil. Mix cornstarch with a bit of cold water; stir into boiling sauce until thickened.
- Thread marinated chicken onto soaked skewers. Preheat grill to medium-high and grill skewers for 8–12 minutes, basting with sauce.
