Ingredients

  • 1/4 cup Water
  • 1/4 cup Red Wine or Mirin Can be replaced with white wine or apple cider vinegar
  • 2 tablespoons Brown Sugar Coconut sugar can be used instead
  • 1 tablespoon Vinegar Rice vinegar preferred; apple cider vinegar works too
For the Chicken
  • 2 cloves Minced Garlic Substitute with garlic powder if fresh isn’t available
  • 1 tablespoon Ginger Ground ginger can be an alternative
  • 1 teaspoon Ground Pepper Adjust pepper type to your liking
For Thickening the Sauce
  • 1 tablespoon Cornstarch Arrowroot powder can work as a substitute
For the Skewers
  • 1 pound Chicken Breasts or Thighs Ensure even chunks for uniform cooking

Method
 

Preparation
  1. Soak wooden skewers in water for 10–20 minutes to prevent burning.
  2. In a medium bowl, mix soy sauce, water, red wine or mirin, brown sugar, and vinegar. Stir until sugar dissolves.
  3. In a large mixing bowl, combine minced garlic, ginger, ground pepper, and 1/4 cup of sauce. Add chicken and marinate for at least 10 minutes.
  4. Pour remaining sauce into a saucepan, bring to a gentle boil. Mix cornstarch with a bit of cold water; stir into boiling sauce until thickened.
  5. Thread marinated chicken onto soaked skewers. Preheat grill to medium-high and grill skewers for 8–12 minutes, basting with sauce.
