  • 1 cup Shredded Monterey Jack Cheese or cheddar

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish.
  2. In the baking dish, combine the onion, red bell pepper, rice, fajita seasoning, and cayenne pepper.
  3. In a separate bowl, whisk together the chicken broth, green chiles, tomato paste, and olive oil.
  4. Pour the liquid mixture over the rice mixture, ensuring it's coated.
