  • 1/2 teaspoon Salt Adjust to taste.
  • 2 tablespoons Butter Use vegetable oil for a dairy-free version.
  • 1/2 teaspoon Nutmeg Can be omitted if not desired.
  • 1/2 teaspoon Cinnamon Can be omitted if not desired.
For the Saltfish Filling
  • 1 pound Saltfish (Salted Cod) Smoked mackerel or canned salmon can be used as substitutes.
  • 1 chopped Onion
  • 1 diced Bell Pepper
  • 2 cloves Garlic Minced.
  • 1 chopped Tomato

Method
 

Instructions
  1. Activate Yeast: In a small bowl, combine lukewarm water with sugar and instant yeast. Let sit for 5 minutes until foamy.
  2. Make Dough: In a large bowl, whisk together flour, salt, nutmeg, and cinnamon. Add the yeast mixture and melted butter. Mix until a dough forms, then knead for 2-3 minutes.
  3. Proof Dough: Shape the dough into a ball and place in a greased bowl. Cover and let it rise for 20-30 minutes until doubled in size.
  4. Shape Bakes: Punch down the dough and divide into golf-ball-sized portions. Flatten each into a circle about 1/4-inch thick.
  5. Heat Oil: In a deep skillet, heat vegetable oil to 350°F (175°C). Test oil temperature with a small piece of dough.
  6. Fry Bakes: Add shaped dough circles to hot oil, frying for 1-2 minutes on each side until golden brown.
  7. Drain Oil: Remove bakes using a slotted spoon and transfer to paper towels to drain excess grease.
  8. Prepare Saltfish: Boil salted cod for 15-20 minutes. Drain, rinse, and flake.
  9. Sauté Aromatics: Heat oil in a skillet, add onion, bell pepper, garlic, and tomato. Sauté for 3-5 minutes, then add flaked saltfish and cook for 3 more minutes.
  10. Assemble and Serve: Slice open the bakes and fill with saltfish. Serve warm, possibly alongside fresh avocados or fruit.
