Cover and refrigerate for at least 3 hours, or overnight for optimal flavor. Before cooking, let the marinated chicken sit at room temperature for 15-20 minutes to ensure even cooking.
  2. While the chicken marinates, bring a large pot of salted water to a boil. Add your chosen short-cut pasta and cook according to package instructions, usually around 8-10 minutes, until al dente. Once cooked, drain the pasta and set it aside, reserving a cup of the pasta water for later, if needed.
  3. Heat 1 tablespoon of extra virgin olive oil in a skillet over medium-high heat. Once hot, add the marinated chicken in a single layer, cooking for 3-4 minutes per side until nicely seared and golden brown. Remove the chicken from the skillet and set it aside on a plate to rest while you prepare the vegetables.
  4. In the same skillet, add the chopped bell peppers and minced garlic, sautéing for about 1-2 minutes until fragrant and just tender. If using, add the minced scotch bonnet pepper to the mix for an extra kick.
  5. Stir in 1 teaspoon of smoked paprika, additional Jerk Dry Rub Seasoning, and 2 tablespoons of flour, cooking for another minute to toast the spices. Gradually whisk in 1 ½ cups of heavy cream and 2 cups of chicken stock until the mixture is smooth. Add back the seared chicken and a few fresh thyme sprigs, letting the sauce simmer on low heat for 15-18 minutes until thickened.
