  • 4 links Fully cooked breakfast sausage
  • 4 large Eggs
  • 1/4 cup Milk Non-dairy milk for lactose-free option
  • to taste Salt
  • to taste Pepper
  • 1 cup Cheddar cheese Or substitute with Monterey Jack or pepper jack
For the Dough
  • 1 package Crescent roll dough Can substitute with puff pastry or tortillas
  • 2 tablespoons Butter Or use oil as a lighter alternative

Method
 

Directions
  1. In a skillet over medium heat, warm the fully cooked breakfast sausage links for about 5 minutes or until heated through. Once warm, remove the sausage from the skillet and cut them into bite-sized pieces.
  2. In a medium bowl, whisk together 4 large eggs, a splash of milk, and a pinch of salt and pepper until completely blended. Pour the egg mixture into the same skillet and scramble for about 3-4 minutes until just set.
  3. Preheat your oven to 375°F (190°C) and grease a baking sheet. Roll out the crescent dough and separate into triangles. Place pieces of sausage and a scoop of scrambled eggs on each triangle, sprinkle with cheddar cheese, and roll tightly.
  4. Arrange the assembled roll-ups on the greased baking sheet and bake for 12-15 minutes until golden brown and flaky.
  5. Let the roll-ups cool for about 5 minutes on the baking sheet before serving warm.
