Ingredients
  

For the Salad
  • 4 cups Watermelon Seedless varieties are preferable.
  • 1 medium English Cucumber Can substitute with Persian cucumber.
  • 1 cup Feta Cheese Goat cheese can be used for a twist.
  • 1/4 cup Fresh Mint Leaves Basil can be a substitute.
  • 1 medium Fresh Lime Use for zest and juice.
For Seasoning
  • 1 teaspoon Sea Salt Flakes
  • 1 teaspoon Fresh Ground Black Pepper

Method
 

Preparation Steps
  1. Chop the watermelon into bite-sized cubes and slice the cucumber into thin rounds or half-moons. Add both to a large serving bowl.
  2. Crumble the feta cheese into small chunks and sprinkle over the watermelon and cucumber mixture.
  3. Chop the mint leaves coarsely and add them to the salad.
  4. Zest and juice the lime, then add both to the salad bowl.
  5. Sprinkle sea salt flakes and freshly ground black pepper over the salad and gently toss to combine.
  6. Taste the salad and adjust seasoning with more salt or lime juice if needed.
  7. Chill the salad in the refrigerator for about 15 minutes before serving.
