Step-by-Step Instructions for Green Apple Soda
  1. Start by washing and chopping 4-5 Granny Smith apples into small chunks. Blend until well puréed.
  2. In a medium saucepan over medium heat, combine 1 cup of sugar and 1 cup of water. Stir until dissolved.
  3. Add blended apple puree, ¼ cup lemon juice, and a pinch of salt to the sugar-water mixture.
  4. Allow to simmer for 15 minutes. Let cool for 10 minutes afterward.
  5. Strain the mixture using a fine mesh strainer to separate syrup from solids. Optionally add citric acid or green food coloring.
  6. In a large pitcher, mix 3-4 tablespoons of syrup with 4-6 cups of chilled sparkling water. Stir gently.
  7. Fill glasses with ice and pour the fizzy soda over ice. Garnish with fresh mint leaves.
