- Prepare Baking Dish: Grease a 9 x 13 inch baking pan and preheat your oven to 350°F (175°C).
- Make the Dough: Melt 1 cup of milk with 1/4 cup of cubed butter. In a bowl, whisk together 2 cups of flour, 2 teaspoons of yeast, 1/4 cup of sugar, and 1/2 teaspoon of salt. Mix in the warm milk mixture and 1 beaten egg, then add remaining flour to form a soft dough. Knead for 5 minutes.
- Prepare Filling: Mix 8 oz of cream cheese, 1/4 cup of sugar, and 1 teaspoon of vanilla extract until smooth. In another bowl, toss 1 cup of raspberries with 2 tablespoons of sugar, 1 tablespoon of cornstarch, and 1 teaspoon of lemon zest.
- Assemble Rolls: Roll out the dough to a rectangle, spread the cream cheese mixture, sprinkle the raspberry mixture, roll it up tightly, and cut into 12 pieces. Place in the prepared pan.
- Rise: Cover and let the rolls rise in a warm place for 40-60 minutes until doubled in size.
- Bake: Bake in the preheated oven for 20-25 minutes until golden brown.
- Glaze and Serve: Mix 1 cup of powdered sugar, 2 tablespoons of melted butter, 1 teaspoon of vanilla extract, and enough milk for a pourable consistency. Drizzle over warm rolls.
