  • 1 piece Green Chilli Chopped, optional for heat
For Frying
  • 2 cups Extra Virgin Olive Oil Can substitute with neutral oil

Step‑by‑Step Instructions for Quick Vegetable Pakoras
  1. Prepare the Vegetables: Wash and finely chop or grate your chosen vegetables and place them in a large mixing bowl.
  2. Mix the Dry Ingredients: Add besan flour and baking powder to the bowl, and mix gently to coat the vegetables.
  3. Blend in Aromatics: Incorporate minced garlic, grated ginger, and fresh curry leaves, mixing until well combined.
  4. Heat the Oil: In a large frying pan, add enough olive oil to cover half an inch of the bottom and heat until shimmering.
  5. Fry the Pakoras: Form small discs from the mixture and fry in batches for about 3-4 minutes until golden brown.
  6. Drain Excess Oil: Lift cooked pakoras out of the oil and place on paper towels to absorb excess oil.
