Preparation Steps
- In a large mixing bowl, cream together ¾ cup softened butter, 2 boxes of instant pistachio pudding mix, and ½ cup sugar until light and fluffy, about 2-3 minutes. Beat in 2 eggs, 1½ teaspoons of vanilla extract, and ¼ teaspoon of almond extract until well combined and smooth.
- In a separate bowl, whisk together 2 cups of all-purpose flour, ¼ teaspoon of baking powder, and a dash of salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
- Preheat your oven to 350°F (175°C). Line a greased 9x13 inch pan with parchment paper, then press the dough evenly into the prepared pan. Bake for approximately 20 minutes.
- Once baked, remove the pan from the oven and place it on a wire rack to cool completely, about 30-40 minutes.
- While the bars cool, prepare the frosting by beating together 4 ounces of cream cheese and ¼ cup of softened butter until smooth, then add in powdered sugar, 1 teaspoon of vanilla extract, and ¼ teaspoon of almond extract.
- Once the bars are cooled, spread the cream cheese frosting over the top. Optionally, sprinkle ¼ cup of chopped pistachios on top.
- Cut the cooled and frosted bars into squares, and serve at room temperature.
