  • 1 cup Chocolate Chips dark chocolate or carob chips work as substitutes

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of peanut butter, 1/3 cup of honey, and 1 teaspoon of vanilla extract. Stir until you achieve a smooth, cohesive mixture. Next, fold in 2 cups of rolled oats, 1/2 cup of shredded coconut, 1/4 cup of chia seeds, and 1/4 cup of flaxseed meal.
  2. With slightly wet hands, take small portions of the mixture and roll them into balls about 1 inch in diameter. Continue shaping until all the mixture has been formed into bites.
  3. Line a baking sheet with parchment paper and place the energy bites evenly spaced apart. Refrigerate the bites for at least 30 minutes.
  4. Once chilled and firm, transfer the Peanut Butter Oatmeal Energy Bites to an airtight container. Store them in the fridge for up to 10 days or seal them in the freezer for longer storage.
