Step‑by‑Step Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners or lightly greasing with cooking spray or butter.
- In a large mixing bowl, mash 2-3 ripe bananas until smooth; a few lumps are okay for added texture. Mix in 1/3 cup of melted unsalted butter until well combined.
- Add 1 teaspoon of baking soda, a pinch of salt, 3/4 cup of sugar, one beaten large egg, and 1 teaspoon of vanilla extract. Stir until everything is smoothly blended.
- Carefully fold in 1.5 cups of all-purpose flour using a spatula, stopping as soon as you can no longer see dry flour.
- Spoon half of the muffin batter into the prepared muffin tin cups, filling each about halfway. Create a small well in the center of each cup and add about a teaspoon of Nutella for each muffin.
- Cover each well with the remaining muffin batter, filling to about two-thirds full. Gently swirl the Nutella into the top layer of batter.
- Bake for 18-20 minutes until risen and golden brown. Test for doneness with a toothpick.
- Let the muffins sit for about 5 minutes before transferring them to a wire rack to cool completely.
