Preparation Steps
- Crush graham crackers into fine crumbs and mix with melted butter. Press into the bottom of a springform pan.
- Mix cream cheese until smooth, then blend in sugar and vanilla extract.
- Spread half of the cheesecake mixture over the crust. Layer sliced strawberries on top.
- Whip heavy cream to stiff peaks. Dissolve blue gelatin in boiling water and fold into whipped cream. Spread over strawberries.
- Chill in refrigerator for 2-3 hours until set.
- Garnish with whipped cream and additional fresh berries before serving.
