For the Cheesecake Filling
  • 16 ounces Cream Cheese Softened
  • 0.5 cups Sugar Can substitute with honey or agave syrup
  • 1 teaspoon Vanilla Extract
For the Fruit Layers
  • 1 cup Strawberries Sliced
  • 1 cup Whipped Cream Can use plant-based whipped topping
  • 1 packet Blue Gelatin Can use agar-agar for vegetarian option
For Garnishing
  • 1 cup Additional Whipped Cream
  • More Fresh Berries Extra strawberries and blueberries

Method
 

Preparation Steps
  1. Crush graham crackers into fine crumbs and mix with melted butter. Press into the bottom of a springform pan.
  2. Mix cream cheese until smooth, then blend in sugar and vanilla extract.
  3. Spread half of the cheesecake mixture over the crust. Layer sliced strawberries on top.
  4. Whip heavy cream to stiff peaks. Dissolve blue gelatin in boiling water and fold into whipped cream. Spread over strawberries.
  5. Chill in refrigerator for 2-3 hours until set.
  6. Garnish with whipped cream and additional fresh berries before serving.
