For Frying
  • Vegetable Oil Cooking Oil or melted butter
For the Sauce
  • 1/2 cup Brown Sugar balances spiciness
  • 1 tablespoon Chili Powder
  • 1 teaspoon Smoked Paprika
For the Sandwich Assembly
  • 4 pieces Burger Buns toasted
  • 2 cups Coleslaw store-bought or homemade

Method
 

Preparation
  1. Slice chicken breasts horizontally into cutlets and season with salt and pepper.
  2. Whisk together buttermilk and hot sauce in a bowl, then soak chicken for at least 30 minutes.
  3. Combine flour, cornstarch, cayenne, garlic powder, salt, and pepper in another bowl for the dry coating.
  4. Remove chicken from marinade, dredge in seasoned flour and dip again in buttermilk, then back into flour.
  5. Heat oil in skillet to 350°F, ensuring enough oil to fry chicken.
  6. Fry chicken cutlets for 3 minutes on each side or until golden brown and cooked through.
  7. Mix hot oil with brown sugar, cayenne, chili powder, and smoked paprika for the sauce.
  8. Baste fried chicken with sauce, then assemble sandwiches with buns, mayonnaise, chicken, coleslaw, and pickles.
