  • 6 cups chicken broth low-sodium recommended
For Creaminess
  • 1 cup heavy cream or half-and-half/coconut milk for lighter version
  • 1 tablespoon miso paste optional for extra umami

Step-by-Step Instructions
  1. Chop the boneless chicken into bite-sized pieces and set aside. Clean and slice mushrooms, dice onion, and garlic.
  2. In a large pot, heat oil over medium heat. Add onion and garlic, sauté for 3-4 minutes until translucent.
  3. Introduce chopped chicken to the pot. Cook for 5-7 minutes until chicken is browned but not fully cooked.
  4. Stir in sliced mushrooms and cook for an additional 5 minutes until softened.
  5. Pour in chicken broth and bring to a boil. Add wild rice, reduce heat to low, cover and simmer for 45-50 minutes.
  6. Stir in heavy cream and let simmer for another 5 minutes.
  7. Taste and adjust seasoning with salt, pepper, and miso paste if desired. Serve warm with crusty bread.
